If you aren’t from the South…you can still love some cobbler! Throw together this blueberry-peach cobbler for an end of the summer picnic, back to school get together, or weeknight treat. Cooking Light has amazing cobbler recipes, so I can’t claim this one as my own. But, my tummy can attest to its deliciousness!

The Fixin’s You Will Need: 

5 pounds of peaches-go ahead and pit, peel, and slice them (make sure they aren’t too ripe or it will make your cobbler runny)

1 cup granulated sugar divided

2 tablespoons fresh lemon juice

3/8 teaspoon salt, divided

1 1/2 cups and 2 tablespoons all-purpose flour, divided

1 teaspoon baking powder

cooking spray

1/2 cup butter, softened

2 large eggs

1 teaspoon vanilla extract

3/4 cup buttermilk (make your own with milk and white vinegar or milk and lemon juice)
